Where Fire Meets Flavour: A Night of Open-Flame Cooking with Terra Firma Dining

Kilcoy Global Foods recently partnered with Terra Firma Dining for an unforgettable fire dining experience at Yandina Station, on the Sunshine Coast, celebrating premium Australian beef, elemental cooking and the simple joy of coming together over great food. Centred around an open fire pit, the event highlighted how exceptional produce and back-to-basics techniques can create moments that are both memorable and meaningful.

Using only an open flame, time and the finest local ingredients, the Terra Firma Dining team cooked a selection of Kilcoy Global Foods products live over the coals. Guests were encouraged to gather around the fire, watching the slow transformation of the meat as it cooked, while chatting with the chefs and learning about the unique techniques behind this primal style of cooking. The combination of crackling flames, rich aromas and hands-on storytelling created an immersive experience that connected guests to both the food and the people preparing it.

The open-fire setting provided the perfect stage to showcase a carefully curated range of Kilcoy Global Foods beef, with each cut chosen for its ability to shine over flame. Ebony Black Angus thick skirt, also known as hanger steak, was served as a refined tartare, allowing its naturally rich flavour and tenderness to take centre stage. Ebony Prime tomahawks followed as a true show-stopping feature, cooked directly over hot coals to deliver bold flavour, impressive presentation and exceptional eating quality. Completing the menu was the Carrara Wagyu MB 6–7 cube roll, slowly roasted over the fire to enhance its marbling and develop a deep, robust flavour that perfectly complemented the elemental cooking style.

Each cut was thoughtfully prepared to honour both the quality of the beef and the simplicity of fire cooking, allowing the natural characteristics of the meat to speak for themselves. As Terra Firma’s Chef Charly summed it up, “Absolutely delicious! Tender, juicy and just the right amount of marbling through it.”
